ENERGY BITES
Ingredients
1 cup carrot pulp (packed, but not firmly)
1 cup apple pulp (packed)
1 cup rolled oats
½ almond butter
½ chopped Medjool dates
½ cup chopped walnuts and pistachios (any other nuts of your choice would work)
¼ cup hemp seeds
2 tbsp flax seeds
2 tbsp shredded coconut
1 tbsp vanilla extract
1 tsp cinnamon
½ tsp salt
Optional: add chopped dried fruits (cherries, figs, cranberries) and/or mini dark chocolate chips
Instructions
Mix all the ingredients together, then roll them into bite sizes. Refrigerate for a couple of hours before digging into them, and keep refrigerated after that.
